Pick your veggies
Choose one or a combination of several vegetables.
2 lbs of vegetables generally serves 6 – 8.

Sunchokes (Jerusalem artichoke)
Herbs and Spices
My go to dried herb blend is Herbs d’Provence from Frontier Herbs. I always have it on hand and it makes everything delicious especially these roasted veggies. However, don’t get stuck just with one herb blend. Variety is the spice of life!
Here are some other herbs and spices that work well in roasted veg.
Fresh or dried: rosemary, sage, thyme, winter savory, marjoram or an Italian herb blend
Dried ground spices: cardamom, chili powder, chipotle powder, coriander, cumin, curry powders, smoked paprika
Essentials for the dish
1 Bulb Garlic (or more if you really like garlic) peeled and cloves smashed
1 Orange, cut in half
Preheat oven to 375º
What size to cut those veggies?
That’s your choice. Longer roasting time seems to impart a sweeter flavor, especially in Brussels sprouts. But if you don’t have the time then cut the veggies smaller and go for a shorter time in the oven.
Small size veg – about 3/4″ will take a shorter amount of time to cook – 20 – 30 minutes depending on the veggies you choose.
Larger cut – from 1 – 1/2″ up to 2″ can take up from an hour and a half or more.
Note: When roasting large cut veggies I always cover the pan. Small cut veg can be left uncovered.
Season the veggies
Place the cut veggies and smashed garlic on a sheet pan. Season with sea salt, herbs and spices of your choice, and douse with olive oil and balsamic vinegar. Mix well. Place the orange halves, cut side up in the pan.
Place in a 375° oven. After 20 minutes stir the vegetables. Then stir about every 10 – 15 minutes until veggies are done to prevent burning.
When done and the orange halves have cooled enough, squeeze the juice over the veggies, stir well and serve.
