Roasted Green Beans with Olives
It can’t possibly get easier than this! And so delicious!
1 lb fresh green beans, stemmed
1/2 cup pitted kalamata or green olives
freshly ground black pepper
Preheat the oven to 375
Put the green beans and olives on a cookie sheet
Douse with a bit of olive oil, add a sprinkle of sea salt and a bit of black pepper
Roast for 12 – 18 minutes, depending on how thick the green beans are.
When they come out of the oven drizzle with a little balsamic vinegar and serve warm or room temperature.
Variations on a theme:
Toss in some finely sliced shallot, red onion or garlic cloves with the green beans before cooking.
If you have some of those lovely multi-colored carrots slice ’em up the same size as the green beans and add them in. Their rich, sweet flavor will add a delicious dimension to the dish.
Gluten-free: Many balsamic and flavored vinegars are not gluten free. Check the ingredients.
Replace the balsamic with juice of an orange and add it while cooking.
Chopped, toasted almonds, pecans or walnuts are great when added at the end.
