Apple Butter Not-Bake Beans

These beans are so yummy!

Ingredients
  • 1 cup pinto beans or red chili beans
  • 2 tablespoons Organic Olive Oil
  • 1 diced onion
  • 2 diced carrots
  • 2 diced celery
  • 1 teaspoon garlic powder
  • 1 1⁄8 tablespoons dry mustard powder
  • 12 ounces apple butter
  • 1 pinch salt
Directions

Using a 6 quart saucepan, heat 2 tablespoons olive oil on a medium-high heat and add the onions along with a pinch of sea salt.

Cook the onions for up to 10 minutes, until they are rich and creamy. Add a little water if they begin to scorch. Stir regularly.

When the onions are well cooked add the carrots and celery along with a pinch more sea salt and cook till tender.

Add the beans, apple butter, garlic powder and mustard powder. Stir well.

Add water enough to give you the desired consistency.

Simmer for 20 to 30 minutes, stirring regularly but carefully so you don’t mash up the beans.

Notes

*Note: Every brand of apple butter has it’s own unique flavor. Some will be a bit spicy, some more tart.
Try different ones till you find your favorite. My preference is Eden brand since it’s pretty much the only organic apple butter around - and I love the flavor.

Serve them with cornbread or rice and a salad, or as we do for one of our clients, he likes to have them with our oven baked barbeque baby backs.
