All Purpose – All Around Grain Salad Dressing

Inspired by a recipe for French Barley Salad from The Moosewood Cookbook.

We use this delicious dressing on pretty much all of our grain salads and even some of our lentil salads.

Tasting it on its own it’ll make your mouth pucker, but once the ingredients are marinated in this tangy sauce it’s just absolute deliciousness.

  • 1⁄2 cup fresh lemon juice ((about 3 lemons) or organic lemon juice)
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced or smashed with salt
  • 2 teaspoons Dijon mustard
  • 2 tablespoons chopped fresh dill or mint
  • 1⁄2 teaspoon salt – or more to taste
  •   freshly ground black pepper to taste

This amount of dressing is good for 1 cup cooked grain or beans plus veggies. Quinoa, Farro, Black Rice, French Dupuy or Beluga Lentils all work well with this dressing.

We use brightly colored veggies in the salads: Peppers, Red Onion, Green Beans, Cremini Mushrooms (I know those aren’t bright, but they are yummy when marinated in this dressing.)


We generally make 4 times this recipe since it keeps for quite a while in the fridge and we will have it on hand at a moments notice.
