Mashed Japanese Sweet Potatoes
2 pounds Japanese sweet potatoes, scrubbed
2 tablespoons unsalted butter or Earth Balance
1/2 to 1 teaspoon grated orange zest
1/2 teaspoon sea salt, plus more if needed
Preheat the oven to 400º F.
Pierce the sweet potatoes a few times with a fork.
Bake the potatoes in an uncovered roasting pan for 45 to 60 minutes, until tender. If you have very large sweet potatoes it might take a little longer.
Scoop out the sweet potato
When the sweets are cool enough to handle cut them in half, lengthwise.
Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food processor.
Finish the dish
Add the other ingredients to the sweet potatoes in the food processor: butter/Earth Balance, sweetener of your choice, orange zest, balsamic and salt.
Puree until smooth.
Don’t eat them all before you serve them…….
