Beet “Noodles” with Garlic and Basil

Special tools: you’ll need one of those tools that make vegetable spirals. I like the ones that give you several different blades to create different thicknesses depending on the vegetable you’re using and the type of dish you are creating.

Ingredients
2 lbs beets, peeled and put through the spiral slicer
3 tablespoons red wine or apple cider vinegar
2 tablespoons olive oil
sea salt, to taste
freshly ground black pepper, to taste
2 – 4 cloves garlic, sliced finely
2 – 3 tablespoons chopped fresh basil – all depending on how basily you want it to be

Optional – 4 oz fresh mozzarella, chopped into small pieces or feta, crumbled

Directions

The slicer makes very long strands – too long to manage on a plate or fork! After you run the beets through the spiral slicer you will need to cut them into shorter lengths.

Pre-heat the oven to 375º

Place the spiral sliced beets on a rimmed sheet pan.

Douse with the oil and vinegar and add a bit of sea salt.

Add the garlic and mix well.

Roast in the oven for 10 to 15 minutes. The beets should still be a little firm when done.

Toss in the basil and if adding the cheese do so now.

Put onto a serving platter.

It’s oh, so easy and oh, so delicious!
