Spicy Slaw with Lime and Cilantro (or Parsley)
1 small head cabbage – about 1 1/2 lbs, shredded finely
1 small carrot, fine julienne
1/2 medium red onion, halved and sliced finely
1/2 apple, small dice
1/2 cup chopped cilantro (or parsley)
1/2 cup vegannaise or mayonnaise (or more if you like the salad more creamy)
2 limes, zested
4 limes, juiced
1 serrano or jalapeño chile, seeded and minced
2 large garlic cloves, minced then smashed with sea salt (use the flat part of your knife blade to do this)
sea salt to taste
Optional addition: 1/2 cup chopped toasted walnuts
In a large bowl mix cabbage, carrot, onion, apple and cilantro (or parsley).
Whisk together the dressing ingredients: vegannaise or mayo, lime zest and juice, minced chile pepper and garlic. Season with sea salt to taste.
Add the dressing to the veggies and mix well to thoroughly incorporate.Cover and refrigerate for at least 1 hour.
Keep in fridge until ready to serve.
This delicious salad will keep for several days in the fridge and just gets better and better every day!
