Shaved Zucchini Salad with Fennel and Red Onion
2 medium zucchini
1 small fennel bulb, quartered and sliced finely
1/4 red onion, sliced finely
2 limes, juiced
1 lemon, juiced
1 navel orange, juiced
sea salt to taste
handful baby lettuce or baby arugula
Cut the zucchini in half crosswise.
Using a vegetable peeler, shave the zucchini into long thin ribbons.
Combine the zucchini, fennel and red onion in a bowl.
Add the lime, lemon and orange juice.
Mix well to combine.
Add sea salt to taste.
Allow the vegetables to sit for 30 minutes to allow the flavors to blend.
Toss in the baby lettuce when you are ready to serve the salad
Chopped toasted almonds or raw pine nuts.
Finely sliced carrot.
